
Ingredients
- ½ kilo fresh spinach
- ½ kilo various greens and herbs: chicory, zochoi, kafkalithres, flank, nettles, paza, poppies that we find at the grocery store or in nature
- 1/3 cup olive oil
- 3/4 cup grated onion
- 1 cup chopped green onions
- 1 leek, chopped - only the white part (optional)
- ½ cup finely chopped dill
- ½ cup chopped parsley
- 3/4 cup olive oil
- ½ kilo homemade phyllo pastry or ready and thick
- salt and pepper
- soda
Εxecution
Wash and clean spinach and greens. Blanch and put them to drain.
Put olive oil in a saucepan to heat up. Saute lightly two onions and leeks. Add spinach, greens, dill, parsley, salt and pepper. Mix and remove from heat. (in case you use cheese rub and mix with remaining mixture) Grease the pan lightly in the oven and poure half of the phyllo pastry spreading them one by one with olive oil. Spread over the filling, sprinkle with some freshly grated pepper and poured over the phyllo pastry thats left, lubricating them again one by one.
Divide the pie into pieces. Brush with as much olive oil left over and bake at 200 ˚ C for about a quarter.
Remove from the oven and sprinkle with baking soda. Put it again in the oven until the surface is well browned (45 'approx.) If the pie is made with homemade phyllo, poure down four phyllo and spread over half the filling. Lay two more phyllo and spread the remaining filling. Finish paving four phyllo to the surface.
Bake it for one hour at 200 ˚ C. |

- The "Southern Greece Sailing Week or the International Sailing Meeting" for lovers of water sports helds annually in August. The races are on the coasts of the Messinian and the Laconian Gulf, rallying in the three capes of Malea, Tenaro and Akritas.
- The "Swim Crossing" which is held every year on the first Saturday of September, which starts from Kalamata and reaches to Koroni . The sports event is organized by the Nautical Club of Kalamata with the help of O.P.A.N.A.M.,and the Municipalities of Koroni and Kalamata.
- FUTURE TENNIS WORLD CHAMPIONSHIP: takes place in the open tennis Tenta in April.
- In the capital of the prefecture also helds every year (on March 25) the "International Bridge Festival" by the Bridge Sport Club of Kalamata. In this participate Greek and foreign Bridge athletes, including the top Greek bridger employed in the national team of Greece.
- Finally, its organized chess festival, basketball tournament, volleyball, football, tennis championships, cycling, Greco-Roman wrestling and weightlifting, and world-class events like the 4th Freediving World Cup (5-25/09/2011), after the perfectly successful organization of the 3rd Freediving World Cup in June 2010.
The sports facilities of the prefecture such as the Kalamata Municipal Stadium, the Sports Centre of Western Beach, the Eastern Athletic Venues and the Golf Centre have been selected by many athletes and national teams as centers of preparation.
